My Perfect Home Made Pretzel Rolls !!



I absolutely love Pretzel Rolls .... I decided that the price of them in the stores were pricey and that there had to be a way to make them. I was able to finally take sometime and make them, and I have to say they came out great ! They are a bit of a process but well worth it . But considering its basic things we all have in our pantry. Here are my step by step instructions. Follow them exactly- you cant skip steps or take short cuts with these.


Dough Ingredients
3 Cups of All Purpose Flower
1 tsp Salt
1 1/2 TBS Oil ( Vegetable)
1 Package of Instant Fast Rising Yeast
1 1/4 Cups of Warm Water Milk
1/4 Cup of White Sugar

Poaching Solution
7 Cups of Water
4 TBS Baking Soda
1 Tsp Salt
---------------------
2 Eggs- for Egg Wash


In a Mixer add Milk, Sugar and Yeast and whisk it- and let sit for about 5 minutes. Then add in Flour and salt,  and with dough hook on medium mix all ingredients about 3-4 Minutes. Then watch for it to pull away from the bowl, you might have to add a little more flour till it does . I ended up adding in about 1/4 cup more. Then let you mixer with bread hook do the kneading for you. About a good 5-6 minutes on medium speed .

When that is done, remove the dough, cover the inside your mixing bowl with a little  oil or cooking spray and and spread around. Put dough back in and cover with plastic wrap and let rest about 15 minutes in a warm place. If its chilly inside a good tip is to start preheating your oven and put your bowl on top of oven. Also you can lightly dampen a kitchen towel and microwave for 2 minutes and cover the bowl with that as well .

After your dough has rested - transfer to your counter or work space and shape into balls. Cover dough with a towel and let rest for about 15 minutes again. While you are doing things, you can prepare your pouching solution

Line a cookie sheet with parchment paper  ( I didn't have parchment paper, so did grease a pan with cooking spray- but if you do this just be sure to remove from pan pretty fast or they will stick , even greased) after baking time.

To a large pan add in 7 cups of water and 1 tsp salt and bring to a simmer. Then add in your baking soda 1 TBS at a time - CAUTION - you do not want to dump it all in at once or you will have an over flow mess. Then bring water to a nice soft boil.


Put in dough balls ( I did about 5 at a time) into your soft boil poaching solution, let pouch for about 40 seconds then turn over and do another 40 seconds. Remove with slotted spoon and transfer to your backing sheet lined with parchment paper about 2 inches apart. Repeat this process until you have poached all your rolls. Then take a knife and make 2 slits on the top of each roll.
This is what they will look like when you take them out of your Poaching Stage, at this point you will want to cut two slits In the top of each.They looked a bit scary to me at this point, I thought- ugg what have I done. But figured keep going (LOL)
While your oven is preheating, to 425 Degree Fahrenheit - Make and brush on your egg was to the top of your rolls.  Beat 2 eggs with 1 TBS of Water and brush on the top of your rolls - then sprinkle each roll with Kosher Salt or a Course Salt.
Bake for about 20 minutes , check them after 15 minutes and every 2 minutes after that, when they get nice and brown and look like my top pic, they are ready. We rotated our pans, the ones on the top for about 12 minutes then moved to bottom rack and moved the bottom rack up to the top. This seemed to help with that desired browning you look for with a pretzel roll.
This makes about 2 Dozen Rolls, or you can make them a bit bigger to a Hamburger Size and get about 1 Dozen.  The picture to the right ==> is the bigger Bun Size Ones we did also. Im thinking a nice juicey burger with these tomorrow night !
 I also used the same dough to make Pretzel Dogs. Wrap your dough around your dogs, pouch the same as you do the buns, brush with an egg wash and bake about 20 minutes at 425 degrees.** I used Chedar Dogs- came out great too !

Made Regular Pretzels too, and forgot to snap a pictue of them, Before baking the regular pretzels sprinkled with cinnamon and sugar
