Keto Mock Sweet Potato Pecan Casserole #HolidayKeto

Even With the holidays Keto can be super easy cooking for your family and gatherings. It can be made the day before so makes holiday prep cooking a breeze!  Recipe makes a big 9x13 Pan and serves 12 ! And only 2.8 Net Carbs

Ingredients:

1 head of cauliflower Florets
3/4 cup pure pumpkin puree
1/4 Cup Butter or Ghee
1/3 cup Monk Fruit or swerve keto sweetner
2 eggs
1 teaspoon salt
3 TSP Pumpkin Pie Spice
2 TSp Cinnamon
1/2 TSP Nutmeg
2 TBS Pure Maple Extract


Topping
1/4 Cup butter or Ghee
3 TBS - Monkfruit or Swerve
1/4 cup almond flour
4 tablespoons butter softened
1 cup pecans ( chopped)
1/2 TBS Cinnamon

Directions :
Butter a 9x13 Baking Dish
Preheat Oven to 350 degrees F

1) Cook your Cauliflower in Boiling water for approximately 5-6 minutes till fork tender .

2) Drain cauliflower and let sit for a few minutes in colander to cool down .

3) In a food processor , ad cauliflower, Pumpkin, eggs , spices , butter and keto Sweetner and pulse it till its all nice and mashed looking. Keep it still some what.

4) pour your mash  into greased baking pan and spread out evenly.

5) Make Topping -in a bowl and mix all topping Ingredients well.

5)Spread Topping evenly over your mash mixture evenly with your topping .

6) Bake 30 min until topping is browned

Allow this to sit for 10 min before serving.
