Well I have a family reunion gathering to attend tonight for in laws. And being as hot as it it was I wanted to make something, but wanted to get out of the ordinary macaroni/potato/pasta salads! So with some thought I would try to recreate my favorite Broccoli Salad that I love at one particular place we go to dine. It came out great !
My deli sells this for $4.89 LB so this is so much cheaper to make and so easy. Here is my recipe and step by step instructioss below :)
RECIPE
Ingredients:
- (2) Heads of Fresh Broccoli
- (1) Head of Fresh Cauliflower
- (1) Sm. Bag of shredded carrots
- (1/2) Med Red Onion Sliced - THIN
- (1) 10 ox box of Raisins
- (1) Lg Jar of Mayo
- (2) Cups of Milk
- (1) Cup Sugar (white)
- (1) TBS Salt
- (1) TBS Black Pepper.
1) Cut up broccoli and cauliflower rosettes ( I don't use the stems, too tough) and place in a large bowl. Add shreded Carrots, sliced onions, raisins. and mix together.
2) In another bowl add Milk, sugar, salt , pepper and whisk till sugar dissolves, add in the whole jar of may and whisk to blend well till smooth.
3) Pour May Mixture over your veggies , mix well ( i use my hands so much easier) Cover and let sit in Fridge over night ( at least 6 hours).
This is what the end product looks like -Makes a LARGE Bowl to take to family gatherings or picnics. You can cut this recipe in 1/2 or even double and triple it too Enjoy !!
