One of our favorite recipes is "New York Deli Guacamole,"  which  can be found right on the Avocados from Mexico recipe page. It's super easy to whip up and everyone loves it.This recipe is  perfect for party appetizers, game-day foods or just a simple snack.

INGREDIENTS


  • 3 avocados ripe, halved, pitted, meat scooped out and diced or mashed
  • 3/4 diced English cucumber ripe, halved, pitted, meat scooped out and diced or mashed
  • 1/3 slivered red onion ripe, halved, pitted, meat scooped out and diced or mashed
  • 1 chopped capers ripe, halved, pitted, meat scooped out and diced or mashed
  • 2 chopped fresh dill or 2 tsp dried, plus more to garnish
  • 2 lemon juice freshly squeezed
  • 1/4 kosher salt or sea salt, or to taste
  • 1/4 pound cream cheese chilled and diced
  • 1/2 pound sliced Nova smoked salmon dice

DIRECTIONS
  1. In a large mixing bowl, combine the avocados with the cucumber, red onion, capers, dill, lemon juice and salt. Mix until fully combined.
  2. Spoon the guacamole into a serving bowl, top with the diced cream cheese and smoked salmon and garnish with more dill.
  3. Serve along with bagel chips or toasted bagels.
  4. Note: Alternatively, skip the cucumber in the guacamole and serve the guacamole with cucumber sticks or spoon into seeded cucumber quarters, garnished with dill
