Yummy! Who said eating 100% Plant Based has to be boring or deprived! This cake will make you jump for joy and suprised with how incredibly chocolate it tastes.
How To Make Cake with Vegetables!!/
Ingredients - Cake
1 1/2 cup cooked and peeled sweet potatoes mashed
1/2 Cup+ 2TBS Maple Syrup
1/2 Cup Honey
1/2 Cup Pureed Apples ( no skin no seeds or core)
1 Cup water divided
3 TSP vanilla extract or Vanilla Bean
1 Tsp Sea Salt
2 Tsp Baking Powder
2 Tsp Baking Soda
1 Cup Whole Grain Flour
1Cup Oat Flour
1/4 Cup Chocolate Plant Based Protien Powder ( this holds it together) !! Do not omit
Directions - Cake
Mix all wet ingredients till smooth, add in all dry and mix with mixer till nice batter.
Pour in (2-3) Round Baking Pans - you can also do a 9x13 or Cup Cake Pan w/ Cupcake Liners.
Bake 350 Fareinheit till toothpick inserted is clean . Watch carefully and test. The 3 rounds and cup cakes about 15-18 minutes. 9x13 will be about 25-28 minutes.

Plant Based Fudgy Frosting
* Makes 2 1/2 Cups**
Ingredients- Frosting
2 LArge -Ripe Avacado ( peeled and pitted )
1/2 Cup+3 TBS Cup Cocoa Powder
1/2 Cup Maple Syrup
3 TBS - Grape seed or Coconut Oil
1 Tsp Vanilla liquid or Bean scraped from one Vanilla Pod.
In a food processor put in you Avacado and process to a spread consistency, then add in everything else and process , and that's it! Your ready to go frost your cake or cupcakes- see simple!!
