My new favorite kitchen toy is my Instapot. Making apple butter in an hour is a dream, this used to take me me 12 hours... Not imagine just an hour , it's so easy,steps below
Wash core and cut approximately 16 small apples. As you can see I don't even peel them. These were small , so adjust the amount - fill IP to the max fill line of quartered apples. * I have a 6QT
Attach lid, set vent to close. Cook on Pressure for 10 minutes.Allow to natural vent for 10 min, then do a manual vent. This is what it will look like - don't worry it will become this scrumptious dark brown glorious apple butter soon .
Remove cinnamon stick (if used) . And use an emulsifier stick blender, to blend till smooth. * You can also use a traditional blender in small batches and put back in your liner pot if you don't have a stick blender . And blend a few minutes till smooth and looks like this!!
Turn off saute and At this point decide if your going to freeze or can . To can addle into sterilized Jars, wipe rims clean and place lids on. And process jars for 10 minutes in a water bath ..To Freeze let cool down a bit and ladle into freezer containers to freeze. The apple butter will thickens on it's own more after a few hours. So you can also place some in fridge to enjoy right away.
